Enoki mushrooms

There are over 10,000 varieties of mushrooms that do the same if not a better job than meat. So really we are spoilt for choice and each mushroom has its own unique functions and indications. However, I prefer the darker variety in general with any fruits and vegetables including mushrooms. However, enoki mushroom is one I use in bone broths as it has a chewy taste like meat and is known as the king of mushroom for protein.

Enoki is ideal for invigorating energy in the Spleen and Stomach, treating Liver disease and helping to fight cancer, intestinal ulcers and tumours. It is said that this mushroom can promote mental development and was given the nickname wisdom mushroom. 

Enoki mushrooms contain protein, vitamin B2, vitamin D, and potassium, and is a rich source of zinc and lysine. Essential B vitamins assist with body metabolism and blood fat reduction. However, the benefits with enoki do not stop here. Other benefits include:
