Chai latte


Chai latte for 2:

2 cinnamon sticks (Sri Lankan is best)

2 cardamom pods

2 star anise (great for viruses)

1/4 tsp cloves

2 tsp loose black tea leaf


Roughly break up and bruise the mix in a pestle and portar, pour into a saucepan, add 2 cups of milk of your choice (I use unhomogenised), simmer on lo for 5 minutes, pour into 2 mugs through a sieve, sweeten with maple syrup or honey if you wish and top up with frothy milk sprinkling cinnamon powder at the top. Sit back, relax and enjoy.


If you wish, you can make a bigger batch to keep for up to 3 months but fresh is always best.
